Start with a base of aromatics, (onions and celery), layer in a depth of flavor with savory seitan, garlic, and thyme, then add in frozen gnocchi to serve as the dumplings for this luxurious stew before finishing off with a touch of freshness with mixed vegetables and arugula.

Vegan Chikin & Dumpling Stew

Ingredients

  • 10 oz seitan
  • 1 c yellow onion
  • 1 c celery
  • 1 tbsp flour
  • 3 cloves garlic
  • 1 tsp thyme
  • 2 c vegetarian no-chicken broth
  • 1 c frozen mixed vegetables
  • 6 oz frozen potato gnocchi
  • ½ tbsp vegan butter
  • ½ c arugula
  • 1 tbsp olive oil

Instructions

  • Prep and chop the vegetables and dice the seitan into 1-inch cubes.
  • Sauté the seitan with a drizzle of olive oil and a sprinkle of salt and pepper for 4 minutes. Then add in the onions, celery, garlic and thyme and sauté for another 5 minutes until the vegetables are tender. At the end, add in the butter to melt, then the flour and cook for 1 minute.
  • Next, add in the broth and stir to allow the flour to incorporate and bring to a boil. Cover and lower to a simmer for 10 minutes.
  • After 10 minutes, stir in the mixed vegetables and the gnocchi and simmer for 5 minutes, or until gnocchi is cooked through. Add some water, if needed, to thin out the stew to desired consistency.
  • When ready to eat, serve in bowls with a sprinkle of thyme, salt, pepper, and a topping of fresh arugula.
