Island Chikin Stir Fry

We’re spicing things up by infusing a little tropical flair into this vegan Island Chikin Stir Fry.

Start by slicing up the seitan “chikin” into strips and marinating them in a sauce that is whisked together by combing soy sauce, sesame oil, ginger, garlic, vinegar, agave, garlic, and crushed red pepper.

Next, sauté the red onion, peppers, and broccoli for 5 minutes, then add the chikin strips with the marinade and sauté for another 5 minutes, adding in the pineapple at the end to incorporate and unlock its juicy flavor.

Serve with a scoop of fresh rice and top with scallions and creamy avocado, letting the island vibes warm your soul as you enjoy this elevated Island Chikin Stir Fry.

Ingredients

  • 8 oz seitan
  • 1/3 c red onion
  • 1 c red bell pepper
  • 1 c broccoli
  • ¼ c soy sauce
  • 2 tsp sesame oil
  • ¼ tsp ground ginger
  • 2 tsp garlic
  • 1 tsp rice vinegar
  • 2 tsp agave nectar
  • 1 tsp crushed red pepper
  • 2 tsp corn starch
  • 1/3 c basmati rice
  • ½ c pineapple chunks
  • 1/3 c scallions
  • ½ c avocado
  • ½ tbsp olive oil

Instructions

  • Prep and chop the vegetables, cut the seitan into strips and cook the rice by bringing the rice, a 2:1 ratio of water and a pinch of salt to a boil. Turn down to low and cook for 15 minutes.
  • Make the marinade by whisking the soy sauce, sesame oil, ginger, garlic, vinegar, agave, garlic, and crushed red pepper. Put in the seitan strips and marinate for 10 minutes.
  • Begin by sauteing the red onion, peppers, and broccoli for 5 minutes. While the vegetables are cooking, make a slurry with the cornstarch by mixing with equal parts of water.
  • Next add in the seitan strips with the marinade and mix in the slurry and bring to a simmer, stirring frequently. Cook for 5 minutes and thin out with small amounts of water if the sauce becomes too thick. At the end, add the pineapple and cook for 1 more minute.
  • When you’re ready to eat, plate the stir fry with a scoop of rice, then the vegetable and seitan stir fry and top with diced scallions and avocado.
