Grilled Chikin and Strawberry Salad

One way to brighten up your mood on a cold winter day is with the sweet flavor of strawberries! When it’s cold and blustery outside, slice up some of these bright red berries and make a vegan version of Grilled Chikin and Strawberry Salad.

This salad can be assembled in minutes for a quick lunch when time is not on your side. Chop, prep and store the components in the refrigerator for quick assembly during the week. 

Start with a base of salad greens, add the toppings including chopped up grilled seitan, layer on slices of fresh strawberry, drizzle over the creamy dressing, and sprinkle on the walnuts for some crunch.

Let your tastebuds take a trip to a warm farmers market, if for only a few minutes, and brighten up your day with this Grilled Chikin and Strawberry Salad!

Grilled Chikin and Strawberry Salad

Ingredients

  • 8 oz seitan
  • ½ c quinoa dry
  • ¼ c coconut yogurt plain
  • 1 tbsp balsamic vinegar
  • 1 tbsp agave nectar
  • 1 ¼ c strawberries
  • 2 c spinach
  • 1 c arugula
  • ¼ c red onion
  • 1/2 c avocado
  • 2 tbsp walnuts
  • ½ tbsp olive oil

Instructions

  • Prep and chop the vegetables, cut the seitan into strips, and cook the quinoa by bringing a 2:1 ratio of water to quinoa and a pinch of salt to a boil. Turn down to low and cook for 15 minutes.
  • Sauté the seitan strips with a drizzle of olive oil and a sprinkle of salt and pepper for 5 minutes until browned up, then set aside.
  • Prepare the dressing by whisking together the yogurt, balsamic vinegar, agave, and a few smashed strawberries.
  • When you’re ready to eat, assemble the salad by combining the spinach, arugula, onions, sliced strawberries, seitan, and quinoa together. Drizzle with dressing and top with sliced avocado and walnuts.
